Do we have anyone in Iowa?  The pictures were really sad to see.  I tell you, I am always astounded by the power of water.  We do our very best to control it with dams and levies but when water really wants to get some place, there is very little that can be done to stop it.  <br />
<br />
I hope for the best for all those people impacted by the situation.  Floods from heavy rains have taken quite a toll in many places in the Midwest this week.  <br />

			<description><![CDATA[I have long been a fan of sliced pork belly.....to me it's the ultimate form of bacon. I stock up whenever I hit my Asian market, and at 3.99/lb it is not too pricey though more than I pay for bacon.<br />

On this last trip I bought the unsliced hunk of pork belly and last night, I roasted it. OMG! It is a completely different taste experience, PLUS half the price of the sliced version. I scored the rind and baked it at 325 for about 3 hours. Incredible! I know Diane has done it this way for awhile and I'm not sure why it took me so long, but this is now a favorite. DH loved it too (he is now down over 25 lbs btw....not exactly ZC, we are calling it "paleo").<br />

Charles, we have to do a shopping day soon at the Asian market and my other little local meat place....bring your cart!]]></description>

			<description><![CDATA[Hi there!  I’ve been on the forum for a long time and I truly believe that ZC is the very best way to eat but, as I shared with Wyatt recently, I fall off the wagon more often than I like to admit. Carbs still have a hold on me – I still crave certain things.  Maybe that’s the way it will always be for me but I MUST learn not to act on those cravings.  I realize I need some accountability to become stronger/to do the right thing with regards to my eating and so here is my journal. <br />
 <br />
I seem to be able to stick to ZC 100 percent for a month or two months at a time and then I cave to something that the minute before held no power over me. I want to blame it on hormones but that’s probably a cop-out.  When I eat something I shouldn’t, it starts a downward spiral and it takes me a couple of days to get back on track.  It’s ridiculous that I keep doing this as I feel so much better when I’m eating ZC.  Within hours of eating carbs, my arthritis kicks back up and my fingers start aching.  My back starts hurting.  I don’t sleep soundly.  My stomach immediately gets bloated and my mind gets foggy.  It’s that quick.  It’s obvious that carbs are not good for me mentally or physically.<br />
<br />
I need to get control over this and make ZC my 100 percent WOE – all the time, no matter what.  I can’t guarantee that this journal will be very interesting but I’d appreciate any words of advice, or even a good butt-kicking when needed.  There are so many people here that are inspirational and I value all your opinions. <br />
<br />
My serious commitment started yesterday and I had coffee (with a tad of cream and splenda – I’m working my way to just coffee/more often decaf), for lunch I had eggs fried in butter with a pinch of cheese and bacon and dinner was a thick ribeye. I started getting ancy for something while watching TV last night so had a piece of dried meat which was nice and chewy.  No red wine passed my lips last night – victory! <img src="http://forum.zeroinginonhealth.com/images/smilies/smile.gif" style="vertical-align: middle;" border="0" alt="Smile" title="Smile" /> I know I can do today and I bet I can do tomorrow, too.  <br />

Ingredients<br />

4 Oopsie Rolls<br />
1/2 tsp. salt<br />
1/4 tsp. black pepper<br />
1/2 T. garlic powder (or 1 T minced garlic)<br />
2 lb. ground chuck (80/20)<br />
1 tsp. dried oregano<br />
1 tsp. ground cumin<br />
1 T butter (glass 8x8 glass baking dish)<br />
1 cup whole milk ricotta cheese<br />
1 cup heavy Whipping cream<br />
1/2 tsp. paprika<br />
2 eggs<br />
1/3 cup grated Parmesan cheese <br />
<br />
Directions<br />
Preheat oven to 375 degrees F.<br />
<br />
Ground Beef mixture<br />
In a large skillet, Add ground beef, oregano, cumin, garlic, salt and pepper. Brown evenly. <br />
<br />
Topping<br />
In a medium mixing bowl, combine ricotta cheese, heavy whipping cream, salt and paprika. Add eggs and blend together.<br />
<br />
In a buttered glass 8 X 8 baking dish, layer Oopsie Rolls on bottom (they will overlap), then ground beef. Pour ricotta cheese mixture over layered ingredients. Sprinkle with grated Parmesan cheese. Place Moussaka in the oven and bake for 40 minutes. Let stand for 10 minutes. Cut into 6 servings and serve warm.<br />

Reason #3: Your plan isn't sustainable.<br />

Reason #4: You can't forgive your slip-ups.<br />
