This is home.........though we have new siding on the house, the mail box is now properly set and the pasture on the right side of the drive is goat & hog fenced now. It takes TIME to get a property in order. We are working like mad clearing the left side of the drive for more pasture next year, while the poison ivy is dormant - lol. The house sets in the front 1/3 of our 15 acres.

Many of us feed a family (I also have 4 +dh at home right now) but it doesn't mean we are not ZC. You may very well find that excessive dairy will stall you.

The dairy is hardly a part of the meal...more a condiment...and all raw, unpasteurized and fermented (somewhat pre-digested). What I posted was less than 2 cups total over 7 days. Since I havent had problems with milk in the past, I doubt I will now. But thanks for the heads up. Its always good to define...know what to watch for that way.

WED = Cottage Cheese 1/4 -1/2 cup
THU = Goat Cheese 3T
FRI = String Cheese 1 string is about an ounce
MON = Goat Cheese Crisps 3T ea (generally eat 2)

Oh thought to mention also...milk is a SEASONAL thing. It isnt something we drink/use year round.

Changed my mind on the cheese souffle. Obviously a good memory, has more ingredients than I remembered - oops.

I do have a 5-minute mozzerella I make too though....just whey added to fresh milk and heated. I just read about other forms of fresh mozzarella too:

Ovolini (egg size) 4 ounce balls
Bocconcini (bite size) 1.50 ounce balls
Ciliegine (little cherry size) .33 ounce balls
Manteca is mozzarella molded around a lump of butter Heart

Would love to talk more about how you manage your WOE & cooking for a non-CZ family too :o)

As I said to her, please spend more time on mastering ZC and less time on proselytizing on what types of meat are healthy or not. Why is it that people who don't eat ZC always want to tell those of us who do what meat is best for us? I never understood that. Anyway, she has been "unsubbed" as she put it.
